Last November, Luke Shimp, owner of the popular Red Cow restaurant, once again received the Restaurateur of the Year award. “To be recognized as Restaurateur of the Year for the second time is a true honor,” Shimp says. “I have always viewed my business as a people’s business, and I think this focus on our culture and staff and leadership team retention has led to a great deal of success for Red Cow and beyond.” In December, Shimp’s newest restaurant concept, Red Rabbit, opened in the North Loop in Minneapolis. It specializes in pizza, pasta and oysters. Red Rabbit also features an outdoor patio scheduled to be open during the spring and summer months. Look for a new Red Cow location to open at 2626 Hennepin Ave. S. this summer.
