SotaRol opened in November near 50th and France next door to AgraCulture. It is serving up delicious and inexpensive Asian dishes for people on the go. “I love sushi,” says SotaRol owner Aaron Switz, who describes SotaRol as an Asian concept restaurant with Minnesota subtleties. Switz, already fond of Asian cuisine, was inspired to open SotaRol after discovering sushi burritos while traveling in San Francisco. Along with sushi rolls and bowls (one of which features Tater Tots), SotaRol also offers its own sushi-like burrito, the SotaRito. At SotaRol, customers can choose from house specials or build their own dishes with vegetables, carbs and proteins. SotaRol is fast-casual food that can be customized—because that’s how we roll in Edina.
