Muffins are my go-to on-the-go breakfast or snack for my family. They’re easy to whip up and my kids love them, especially when there is chocolate involved! These chocolate banana muffins are a family favorite of ours. They’re filled with wheat flour, Greek yogurt and no refined sugar. Best yet, my 2- and 5-year-old love to help make them!
Greek Yogurt Chocolate Banana Muffins
- 3 ripe bananas, mashed
- 1/4 cup maple syrup
- 1 tsp. pure vanilla extract
- 1 large egg
- 2 Tbsp. canola or coconut oil
- 1/2 cup plain Greek yogurt
- 1 cup white whole wheat flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup semisweet chocolate chips
- Preheat oven to 350 degrees. Spray a muffin pan with cooking spray.
- In a medium bowl, mash the bananas.
- Add maple syrup, vanilla, eggs, oil and Greek yogurt.
- In a smaller bowl, whisk together the flour, cocoa powder, baking soda and salt.
- Add the flour mixture to the wet ingredients and stir until just combined.
- Fold in chocolate chips.
- Divide the batter between the 12 muffin cups.
- Bake in the preheated oven for 18-20 minutes, until baked through.
- Enjoy!
- Store leftovers in an airtight container.
