Quick and Easy Roasted Tomatoes with Burrata Recipe

On warm Friday evenings in the summer, I love enjoying a glass of wine on the patio with a couple of appetizers. Of course, I don’t want anything too fussy, and this Roasted Tomato with Burrata appetizer is so, so easy. The roasted tomatoes can be prepped ahead of time, making it super simple to serve—for yourself or guests. If you haven’t tried burrata cheese, give it a try. You won’t be disappointed.

Roasted Tomatoes with Burrata

Ingredients

  • 1 pint grape or cherry tomatoes
  • 2 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp. sea salt
  • 1/4 tsp. pepper
  • 1 round of burrata cheese (about 3–4 oz.)
  • fresh basil, chopped,for topping
  • crostini for serving

Preheat the oven to 400 degrees F. Place tomatoes on a baking sheet, and toss with olive oil, garlic, salt and pepper. Roast in the oven for 15–20 minutes, until they start to burst open. Serve the tomatoes on top of or alongside burrata cheese, garnished with fresh basil. Pile on top of crostini, and enjoy!
