Scandinavian Almond Cake
Ingredients:
- Non-stick cooking spray
- 1¼ c. sugar
- 1 egg
- 1½ tsp. pure almond extract
- ⅔ c. milk
- 1¼ c. flour
- ½ tsp. baking powder
- 1 stick melted butter
Directions:
Spray a Scandinavian almond cake pan with non-stick cooking spray. Beat sugar, egg, almond extract and milk. Add flour and baking powder. Add butter. Mix well. Pour batter into cake pan and bake at 350 degrees for 35 minutes. Cover with aluminum foil and bake for 10-15 minutes. Cool in pan before removing. Sprinkle with powdered sugar, slice and serve. Variation: Sprinkle sliced almonds onto the bottom of the cake pan before pouring in the cake batter.
